Ingredients

INGREDIENTS FOR HOT BACON DRESSING FOR SPINACH SALAD

  • 8 oz Baby Spinach
  • 2 Eggs hard boiled/sliced
  • 4 oz Mushroom your choice/cleaned and sliced
  • 5 slices Bacon chopped
  • 1/2 cup Apple Cider Vinegar
  • 1 tsp Sugar can substitute low carb sugar
  • 1 tsp Dijon Mustard
  • 2 tbsp Olive oil
  • Salt and Pepper to taste

Instructions

CONSTRUCT A SPINACH SALAD WITH HOT BACON DRESSING

  1. Chop bacon, cook on medium heat until it is cooked the way you like it, (I like it crunchy) remove from pan, leave the bacon grease

  2. Reduce the bacon grease to 2 /3 Tbsp.

  3. chop red onion and cook in bacon faT until they are translucent

  4. Add vinegar, mustard, sugar, oil, salt and pepper and bring to a boil

  5. Clean spinach and place on 2 plates

  6. Slice mushrooms and divide between the 2 dishes

  7. Slice Eggs and add to each plate

  8. divide dressing between the to plate, and enjoy
