A salad that could be a meal. Savory toppings with a tasty hot dressing to spice up your meal!

			Ingredients
INGREDIENTS FOR HOT BACON DRESSING FOR SPINACH SALAD
- 8 oz Baby Spinach
- 2 Eggs hard boiled/sliced
- 4 oz Mushroom your choice/cleaned and sliced
- 5 slices Bacon chopped
- 1/2 cup Apple Cider Vinegar
- 1 tsp Sugar can substitute low carb sugar
- 1 tsp Dijon Mustard
- 2 tbsp Olive oil
- Salt and Pepper to taste
Instructions
CONSTRUCT A SPINACH SALAD WITH HOT BACON DRESSING
- 
										Chop bacon, cook on medium heat until it is cooked the way you like it, (I like it crunchy) remove from pan, leave the bacon grease 
- 
										Reduce the bacon grease to 2 /3 Tbsp. 
- 
										chop red onion and cook in bacon faT until they are translucent 
- 
										Add vinegar, mustard, sugar, oil, salt and pepper and bring to a boil 
- 
										Clean spinach and place on 2 plates 
- 
										Slice mushrooms and divide between the 2 dishes 
- 
										Slice Eggs and add to each plate 
- 
										divide dressing between the to plate, and enjoy
