Chicken Chili

This is a great version of traditional Chili.  For those that try and cut the amount of red meat or fat in their diets, this is a go to meal.

  • 2 LB Boneless Chicken Breast Shredded
  • 15 once Canned Tomatoes
  • 1 medium Onion Chopped
  • 2-3 TBLSP Chili Powder
  • 1-2 TBLSP Cumin Powder
  • 3 cloves Garlic chopped
  • Salt and Pepper to taste


  1. Place your chicken breast into a medium pot and cover with water.  On medium high heat cook the chicken for approximately 1 hour you will want to check to see if it will break apart. Let the chicken cool slightly and then shred chicken into bite size pieces.
