Ingredients

Salad

  • 3 Plum Tomatoes Chopped
  • 1 Large Red Pepper Chopped
  • 1 English cucmber You can use regular cucumbers but you will need to peel
  • 1 Can Pitted small black olvies Chopped
  • 1/2 Meduim Red onion Chopped. This is optional
  • 1 Cup Feta cheese

Dressing

  • 1 Tblsp Lemon juice
  • 1 Tblsp Red wine vinegar
  • 1/2 Cup Olive oil
  • 1 Large Clove of garlic Crushed or chopped fine
  • 1/2 tsp Oregano
  • Salt and pepper To tas

Instructions

Salad

  1. Chop Plum tomatoes, cucmber, red pepper, black olives and red onion (optional). You will want to chop these vegetable in small pieces so the salad blends well. Place in bowl and set aside

Dressing

  1. You will need to mix all ingredients together and let the dressing sit about 15 minutes. This will allow the garlic to break down and flavor the vinegar,lemon, olive oil mixture. 

Dress the salad

  1. Combine the chopped vegetables with dressing. Mix well. Add the Feta cheese mix and serve

Recipe Notes

This salad is wonderful addition to a full picnic menus or just a side dish to your favorite main dish. You can add more cheese or serve without cheese for those that can’t have lactose. Just one final note the longer you let the dressing sit the mellower the garlic flavor becomes. You can make the dressing the day before.
