Simple but full of flavor
Cut up broccoli and carrots into bite size pieces. Add water to large sauté pan and place vegetables in the pan. Stir frequently place lid on vegetables til they are semi soft. About 10 to 15 minutes. Make sure to check water so vegetables don’t burn. Remove vegetables from pan and set aside for later.
De-shell and clean shrimp. Rinse your scallops. Place 1 TBSP Smart Balance AND 1 TBSP OlIve oil in sauté pan. Add seafood and cook on medium high heat approximately 10 minutes. Add vegetables to seafood. Add 1 TBSP of smart balance salt and pepper to taste and add Parmesan cheese cook for about 5 more minutes. Place in serving dish and serve.
