The bounty that comes from your family garden is amazing, Cucumbers, Peppers, Onions, Garlic and Tomatoes to mention a few. We love our small little garden, Some in pots, some planted in the earth. We stick to Tomatoes and Peppers, but this year we did add cucumbers, and it has been so satisfying to watch them grow. Every summer we reach the point where fresh tomatoes seem to ripen all at once. After we’ve made salads, sandwiches, and jars of canned tomatoes for winter, we still have baskets of ripe tomatoes waiting to be used. That’s when this Classic Homemade Tomato Soup becomes a family favorite. It’s simple, full of fresh tomato flavor, and a delicious way to enjoy the harvest before preserving the rest.
We love serving this fresh tomato soup with a sourdough grilled cheese sandwich, fresh cucumber and cherry tomato salad, garlic bread, or homemade croutons. It also pairs beautifully with a Caprese salad for a light summer dinner.

Leftover tomato soup keeps well in the refrigerator for up to four days. You can also freeze it for up to three months. If freezing, wait to add the cream (if using) until after reheating for the best texture.
Every bowl of this classic tomato soup reminds me why we plant a garden every spring. From watching the first blossoms appear to picking sun-ripened tomatoes, the reward is more than just fresh ingredients. It’s sharing simple meals around the table and preserving the flavors of summer to enjoy long after the growing season has ended.
Here are a few tips when making the soup:
If you are going to be using fresh tomatoes from the garden or your local farm stand there are a few more steps that using jarred tomatoes but the end result is well worth the extra steps.
First you will need to blanch your tomatoes and remove the skin. Bring a pot of water to a rolling boil and place your tomatoes in the water for about 60 seconds, remove from the water and place in a bowl or a clean sink with cold water, once you can handle remove the skin. Do this with all your tomatoes.
Classic Tomato soup have a distinct flavor. Cloves and Onions are a big part of this. This recipe calls for 4 cloves, this may not seem like a lot but believe me those little buds pack a lot of flavor. If you preference is less cloves add just 2, if you really like the flavor you can add more. Just follow the rule of thumb you can always add more but taking away is not possible. You will want to place all the tomatoes into a heavy bottomed steel pot, add the onions and cloves along with chicken broth. Bring this to a slow boil, reduce the heat to medium high and cook for 45 minutes.
Once all the flavors have simmered together and the tomatoes have cooked down to the appropriate texture the next step is to blend the tomato soup. If you would like to remove the seeds this is the time to do it. I have used a food mill to blend the soup, this method helps remove the tomato seeds and gives the soup that professional look, smooth and glossy. If this isn’t an option then you can use an Immersion tool of your choice, or a blender to cream the soup,
The final step is to slightly thicken the soup. For a Gluten free soup skip this part. At this point you will either have your soup in your blender or in a bowl that you strained into from the food mill, if you used an immersion tool you will either have to use a second pot or remove the soup from the original pot for this step. Place the butter in the pot and melt on a low heat, you do not want to brown the butter. Once the butter is melted add the flour to create a roux, whisk the tomato mixture slowly into to roux so that you don’t get lumps. Cook the soup on medium heat stirring while it thickens. Ingredients
- 10 pounds Tomatoes
- 4 whole cloves
- 2 cups chicken broth
- 1/2 medium Onion
- salt
- 2 tblsp butter
- 2 Tablsp Flour
Instructions
Step One

You will need to blanch the Tomatoes and remove skin. ( boiling water add tomatoes for 60 seconds remove from water and place in cold water, then remove skin)

Placed the skinned Tomatoes in a large sauce pot, add the cloves, chicken broth and onion bring to a boil and let cook for 45 minutes on medium high heat.

Take cooked tomatoes and blend either in a food mill (throw away any of the left over tomatoes, or use a blender or Immersion tool

Second step preparing Soup

Place butter in a a soup pot melt and add flour, create a roux, cook for 1 minute. Whisk cooked and blended tomatoes slowly into the butter, flour roux to eliminate lumps, add all Tomatoes to the mixture.

Season with Salt and serve.

Recipe Notes
Some recipes tell you to add Sugar to the soup. This was to eliminate the acid taste that tomatoes sometimes have. I haven’t had this problem, but if you feel the soup is to acidly then add a little sugar to give you the desired taste.
