Blueberry Peach Cobbler

Delicious dessert that can double as a breakfast item.  You can determine how much sugar you want in the recipe, I don't add any additional sugar in the fruit just the Oatmeal topping.

Ingredients

Cobbler Filling

  • 2 pints Blueberries rinsed
  • 1 quaart Peaches light syrup
  • 1 TBLSP Flour

Oatmeal Topping

  • 1 cup Oatmeal old fashion or the 1 minute type
  • 3 TBLSP Smart balance
  • 4 TBLSP Brown sugar

Instructions

Cobbler Filling

  1. Drain Peaches and slice or chop into smaller bite size.  Add Peaches and blueberries in a bowl, add flour and mix fruit and flour together.  Place fruit in a 9x9 greased pan.

Oatmeal Topping

  1. Place Oatmeal, brown sugar and smart balance in a bowl and mix together. I use my hands it is easier to mix the smart balance in the oatmeal but you can use a fork as well.  Once it is well mixed, place the Oatmeal mixture on top of the fruit and place in oven at 375 degrees for 45 minutes.  when you see the fruit begin to boil up and around the topping and the topping is a golden color it is done.  It is best to wait 15 to 30 minutes, the fruit will be extremely hot.

Recipe Notes

In the summer I use fresh peaches as well, but you will have to re adjust how long you cook the cobbler.  It might have to go an extra 15 minutes to ensure the peaches are fully cooked.
